  • 34 lbs chuck roast
  • ½ cup soy sauce
  • 2 tbsp gochujang
  • 3 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 1-inch ginger (grated)
  • 2 tbsp honey or brown sugar
  • 3 carrots (cut into chunks)
  • 2 potatoes (quartered)
  • 1 onion (sliced)

Instructions

  1. Pat the chuck roast dry and season with salt and black pepper.
  2. Heat sesame oil in a Dutch oven and sear the meat on all sides until browned.
  3. In a bowl, mix soy sauce, gochujang, garlic, ginger, honey or brown sugar, and add to the pot.
  4. Add carrots, potatoes, and onion around the roast.
  5. Cover and slow cook on low heat for about 4 hours until fork-tender.
  6. Garnish with sliced green onions and sesame seeds before serving.
