Ingredients
- 3–4 lbs chuck roast
- ½ cup soy sauce
- 2 tbsp gochujang
- 3 tbsp sesame oil
- 3 cloves garlic (minced)
- 1-inch ginger (grated)
- 2 tbsp honey or brown sugar
- 3 carrots (cut into chunks)
- 2 potatoes (quartered)
- 1 onion (sliced)
Instructions
- Pat the chuck roast dry and season with salt and black pepper.
- Heat sesame oil in a Dutch oven and sear the meat on all sides until browned.
- In a bowl, mix soy sauce, gochujang, garlic, ginger, honey or brown sugar, and add to the pot.
- Add carrots, potatoes, and onion around the roast.
- Cover and slow cook on low heat for about 4 hours until fork-tender.
- Garnish with sliced green onions and sesame seeds before serving.
