- 1 1/4 cup All-Purpose Flour
- 3/4 cup Cake Flour
- 1 tsp Corn Starch
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Cold Unsalted Butter (cubed)
- 1/2 cup Light Brown Sugar (packed)
- 1/4 cup White Granulated Sugar
- 1 large Egg
- 1 Egg Yolk
- 2 cups Milk Chocolate Chips (or semi-sweet)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt; set aside.
- Cream cubed butter in a stand mixer on medium-low speed until creamy. Add brown sugar and white sugar; mix until light and fluffy.
- Beat in the egg and egg yolk until well combined.
- Gradually add the dry mixture to the wet ingredients while mixing on low speed. Fold in the chocolate chips gently.
- Measure out six cookie portions (about 5.7 oz each) without flattening them too much and place on a lined baking sheet.
- Bake for 10-12 minutes or until golden brown on top. Let cool on the baking sheet for at least 15-30 minutes before transferring to a cooling rack.
