  • 3/4 cup Cake Flour
  • 1 tsp Corn Starch
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Cold Unsalted Butter (cubed)
  • 1/2 cup Light Brown Sugar (packed)
  • 1/4 cup White Granulated Sugar
  • 1 large Egg
  • 1 Egg Yolk
  • 2 cups Milk Chocolate Chips (or semi-sweet)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt; set aside.
  3. Cream cubed butter in a stand mixer on medium-low speed until creamy. Add brown sugar and white sugar; mix until light and fluffy.
  4. Beat in the egg and egg yolk until well combined.
  5. Gradually add the dry mixture to the wet ingredients while mixing on low speed. Fold in the chocolate chips gently.
  6. Measure out six cookie portions (about 5.7 oz each) without flattening them too much and place on a lined baking sheet.
  7. Bake for 10-12 minutes or until golden brown on top. Let cool on the baking sheet for at least 15-30 minutes before transferring to a cooling rack.
