- 1 lb ground lamb or beef
- 1 medium onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 tomatoes, peeled and chopped
- 1/4 cup tomato paste
- Fresh parsley
- 1 tablespoon red pepper flakes
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon allspice
- 1/4 teaspoon cinnamon
Instructions
- In a bowl, combine warm water, sugar, and yeast; let sit until foamy (5–10 minutes).
- Mix flour and salt in another bowl; add yeast mixture and olive oil to form a shaggy dough.
- Knead on a floured surface for about 5–7 minutes until smooth; let rise in an oiled bowl covered with plastic wrap for 1–2 hours.
- For the topping: Combine ground meat with onion, bell pepper, tomatoes, tomato paste, parsley, and spices in a large bowl.
- Preheat the oven to 450°F (230°C) and line baking sheets with parchment paper.
- Punch down the risen dough; divide into 6–8 portions and roll each into thin circles.
- Spread the meat mixture over each circle while leaving a small edge.
- Bake on prepared sheets for 10–15 minutes until golden brown.
