- 2 cups all-purpose flour

- 1/2 cup powdered sugar

- 1 tablespoon lemon zest
- 2/3 cup fresh lemon juice
- 4 large eggs
- 2 cups granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- For the shortbread crust, mix flour, salt, and powdered sugar in a bowl. Add softened butter and combine until crumbly.
- Press the mixture evenly into the bottom of a greased 9×13 inch baking pan. Bake for about 20 minutes until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, lemon zest, and lemon juice until smooth.
- Pour the lemon filling over the baked crust and return to the oven for an additional 25 minutes or until set.
- Let cool completely before dusting with powdered sugar and cutting into squares.
