Ingredients
- 1 pound bowtie pasta
- 2 tablespoons freshly squeezed lemon juice
- 1/3 cup pine nuts
- 3 tablespoons extra virgin olive oil
- 1/4 cup thinly sliced fresh basil leaves
- 1/3 cup freshly grated parmesan cheese
Instructions
- Cook the pasta in salted water until al dente; drain and rinse with cold water.
- Toast pine nuts in a dry skillet over medium heat until golden brown.
- Whisk together garlic, salt, pepper, lemon zest, lemon juice, vinegar, mustard, and olive oil in a bowl until emulsified.
- In a large mixing bowl, combine pasta, toasted pine nuts, arugula, parmesan cheese, and basil.
- Pour vinaigrette over the salad and toss gently to coat before serving.
