  • 1 ¼ cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×4-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, mix sugar and lemon zest until fragrant. Add eggs, yogurt, olive oil, and lemon juice; whisk until smooth.
  4. Gently fold in the dry ingredients until no streaks of flour remain.
  5. Pour batter into the prepared pan and bake for 55–65 minutes or until a toothpick comes out clean.
