- 1 cup full-fat whole milk Greek yogurt (room temperature)
- ½ cup olive oil
- ¼ cup lemon juice
- 1 ¼ cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 350°F (175°C) and prepare an 8×4-inch loaf pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, mix sugar and lemon zest until fragrant. Add eggs, yogurt, olive oil, and lemon juice; whisk until smooth.
- Gently fold in the dry ingredients until no streaks of flour remain.
- Pour batter into the prepared pan and bake for 55–65 minutes or until a toothpick comes out clean.
- Allow cooling in the pan on a wire rack before slicing. Drizzle with glaze made from powdered sugar and lemon juice.
