Ingredients
- 1 small mango (peeled and diced)
- 2 tablespoons chili sauce (like sriracha)
- 1 tablespoon lime juice
- 1/4 cup honey or agave nectar
- 2 lbs skinless chicken breast
- Fresh cilantro (for garnish)
- Lime wedge (for serving)
Instructions
- Peel and dice the mango.
- In a blender, combine diced mango, chili sauce, lime juice, honey, salt, pepper, garlic, onion, olive oil, orange juice, and wine. Blend until smooth.
- Place chicken in a baking dish or ziplock bag and pour marinade over it. Refrigerate for at least 1 hour (up to 24 hours).
- Preheat oven to 425°F (220°C) or prepare your grill.
- Cook marinated chicken: Bake for 25-30 minutes or grill for about 20 minutes until fully cooked.
- Serve each portion in bowls with rice or cauliflower rice and diced mango on top.
- Garnish with cilantro and lime juice before enjoying.
