  • 238 g milk
  • 82 g cake flour
  • 1 tablespoon vanilla extract
  • 220 g heavy cream
  • 20 g granulated sugar
  • Fresh mango cubes

Instructions

  1. In a bowl, mix melted butter, sugar, eggs, milk, cake flour, and vanilla extract. Sift the batter twice for smoothness.
  2. Heat a nonstick pan over low heat. Pour in a scoop of batter, tilting the pan to spread it evenly. Cook until edges lift (about 1 minute) and gently peel from the pan. Cool on a wire rack.
  3. Whip heavy cream with sugar until stiff peaks form. Transfer to a piping bag.
  4. Assemble rolls by overlapping three crepes, piping whipped cream followed by mango cubes, then rolling tightly.
  5. Chill for 30 minutes before slicing into pieces and serving.
