- 16 g unsalted butter, melted
- 25 g granulated sugar
- 2 eggs (about 55 g each)
- 238 g milk
- 82 g cake flour
- 1 tablespoon vanilla extract
- 220 g heavy cream
- 20 g granulated sugar
- Fresh mango cubes
Instructions
- In a bowl, mix melted butter, sugar, eggs, milk, cake flour, and vanilla extract. Sift the batter twice for smoothness.
- Heat a nonstick pan over low heat. Pour in a scoop of batter, tilting the pan to spread it evenly. Cook until edges lift (about 1 minute) and gently peel from the pan. Cool on a wire rack.
- Whip heavy cream with sugar until stiff peaks form. Transfer to a piping bag.
- Assemble rolls by overlapping three crepes, piping whipped cream followed by mango cubes, then rolling tightly.
- Chill for 30 minutes before slicing into pieces and serving.
