- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/3 cup maple syrup
- 2 large eggs
- 1 1/4 cups mashed bananas (about 3–4 bananas)
- 1 teaspoon vanilla extract
- 1/4 cup plain yogurt
- 3/4 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (180°C) and grease a loaf pan.
- In a medium bowl, sift together flour, baking soda, and salt; set aside.
- In a mixing bowl, cream butter and sugar until fluffy. Mix in maple syrup and then add eggs one at a time.
- Incorporate mashed bananas, vanilla extract, and yogurt until combined.
- Gradually mix in dry ingredients until just combined. Fold in nuts.
- Pour batter into the prepared pan, sprinkle reserved nuts on top, and bake for 50-60 minutes or until a toothpick comes out clean.
- Drizzle warm bread with additional maple syrup before cooling.
