Ingredients
- 4 large carrots
- 3 large apples
- 1 onion
- 5 cloves garlic (or 1 teaspoon garlic powder)
- ¼ cup olive oil
- ¼ cup maple syrup
- 3 tablespoons stone ground Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Preheat your oven to 425°F (220°C).
- Core the apples and chop them into ½” cubes. Slice the carrots diagonally into ¼” thick pieces. Dice the onion and finely chop the garlic.
- In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, pepper, and thyme.
- Add the chopped carrots, apples, onions, and garlic to the bowl. Toss until everything is well-coated.
- Spread the mixture evenly on a baking sheet. Roast for about 15 minutes until one side begins to brown; then flip to brown the other side.
- Continue roasting for another 10 to 15 minutes until tender.
