  • 1/2 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 cup unsalted butter (for glaze)
  • 1/2 cup pure maple syrup
  • 1 cup powdered sugar
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×5 inch pan with parchment paper.
  2. In a small bowl, mash together bananas, brown sugar, vanilla extract, and ground cinnamon.
  3. In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time until well combined.
  5. In another bowl, sift together flour, baking soda, and salt; gradually stir this into the butter mixture until just combined.
  6. Gently fold in the mashed banana mixture until fully incorporated.
  7. Pour batter into the prepared pan and bake for about 30 minutes (lower temperature to 325°F for an additional 15-20 minutes) until a cake tester comes out clean.
