Ingredients
- 3–4 medium bananas (or 2 large bananas)
- 1/2 cup unsalted butter (softened)
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 cup unsalted butter (for glaze)
- 1/2 cup pure maple syrup
- 1 cup powdered sugar
- 2 Tbsp brown sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×5 inch pan with parchment paper.
- In a small bowl, mash together bananas, brown sugar, vanilla extract, and ground cinnamon.
- In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
- Beat in eggs one at a time until well combined.
- In another bowl, sift together flour, baking soda, and salt; gradually stir this into the butter mixture until just combined.
- Gently fold in the mashed banana mixture until fully incorporated.
- Pour batter into the prepared pan and bake for about 30 minutes (lower temperature to 325°F for an additional 15-20 minutes) until a cake tester comes out clean.
- Allow cooling for about 10 minutes before transferring to a wire rack.
