Ingredients
- 11 tablespoons unsalted butter (room temperature)
- 1/4 cup powdered sugar
- 1/4 cup maple sugar
- 1 tablespoon pure maple syrup
- 1 teaspoon maple extract
- 1 1/2 cups all-purpose flour
- 3 tablespoons cornstarch
- 1/2 teaspoon salt
- 1/4 cup unsalted butter (room temperature)
- 1 cup powdered sugar
- 1 tablespoon pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon maple extract
- 1/4 teaspoon salt
Instructions
- In a stand mixer, beat room temperature unsalted butter and maple sugar until creamy. Add powdered sugar and mix until light and fluffy.
- Incorporate pure maple syrup and maple extract.
- In another bowl, whisk together all-purpose flour, cornstarch, and salt. Gradually add to the wet mixture to form dough.
- Chill the dough for 30 minutes, then roll out to 1/8" thickness and cut into maple leaf shapes.
- Bake at 350°F (175°C) for 8-10 minutes until edges are golden brown. Cool completely on wire racks.
- For the filling, whip together remaining butter, powdered sugar, maple syrup, vanilla extract, and salt until smooth.
- Assemble by spreading filling between two cookies.
