- 15 oz canned chickpeas
- 12 oz chopped tomatoes
- 5–6 oz seedless English cucumber
- 1/2 cup diced red onion
- 3/4 cup olive oil
- 2 TBSP apple cider vinegar
- Juice of 1 large lemon
- Italian seasoning blend
Instructions
- In a large shallow bowl, mix olive oil, apple cider vinegar, lemon juice, garlic (optional), Italian seasoning, salt, and pepper to create the marinade.
- Add drained chickpeas, chopped tomatoes, diced cucumber, red onion, and parsley to the marinade. Stir gently until all ingredients are well-coated.
- Let the mixture marinate at room temperature for 30–60 minutes for optimal flavor.
- Serve chilled or at room temperature, garnished with feta cheese if desired.
