Ingredients
- 2 cups cooked shredded chicken
- 1 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1 (16 oz.) package potato gnocchi
- 4 cups organic chicken stock
- 1.5 cups organic heavy cream
- 1 cup chopped kale
- 1.5 tbsp Tuscan seasoning blend
- 3 tbsp cooking apple vinegar or chicken stock
- 1/2 lemon, freshly squeezed
- 5–6 organic sundried tomatoes
- 1 tbsp tomato paste
- 1 cup freshly-grated parmesan
Instructions
- In a large pot over medium heat, combine olive oil and butter until melted. Sauté minced garlic until fragrant.
- Stir in flour and cook for about 2 minutes until golden. Gradually whisk in chicken stock.
- Add shredded chicken and gnocchi; simmer until gnocchi floats (about 5-7 minutes).
- Mix in Tuscan seasonings, sundried tomatoes, tomato paste, heavy cream, apple vinegar, and lemon juice.
- Incorporate chopped kale and cook for an additional 3-5 minutes.
- Serve warm topped with freshly grated parmesan.
