Ingredients
- 1 medium green cabbage (shredded, about 6 cups)
- 1 cup shredded carrots
- 1/2 small red onion (thinly sliced)
- 1/2 cup apple cider vinegar
- 2 tablespoons yellow mustard
- 1 tablespoon Dijon mustard (optional)
- 2 tablespoons honey
- 1/4 cup olive oil
- 1/2 teaspoon celery seed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons fresh parsley (finely chopped)
Instructions
- Shred the cabbage and slice the red onion using a mandoline or sharp knife. Combine them with shredded carrots in a large bowl.
- In another bowl or jar, whisk together apple cider vinegar, mustard types, honey, olive oil, celery seed, salt, black pepper, and optional cayenne.
- Pour the dressing over the cabbage mixture and toss until fully coated.
- Chill in the fridge for at least 15–30 minutes before serving to enhance flavors.
