Ingredients
- 1 tablespoon butter
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 2 pounds lean ground beef (or mix with chicken/turkey)
- ½ cup milk
- 2 large eggs
- ¾ cup breadcrumbs
- 3/4 cup ketchup (plus 2 tablespoons for the mixture)
- ¼ cup brown sugar
- 1½ teaspoons Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, melt butter over medium heat; sauté chopped onions for about 4 minutes, then add minced garlic and cook for another 30 seconds.
- In a large bowl, combine sautéed onions and garlic with ground beef, milk, eggs, breadcrumbs, ketchup (2 tablespoons), Italian seasoning, salt, and pepper. Mix until just combined.
- Transfer the mixture into a loaf pan and smooth the top.
- Bake in the preheated oven for approximately 40 minutes.
- In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar for the glaze. Spoon it over the meatloaf and return to the oven for an additional 20–30 minutes.
- Allow resting for 10 minutes before slicing.
