  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 pounds lean ground beef (or mix with chicken/turkey)
  • ½ cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 3/4 cup ketchup (plus 2 tablespoons for the mixture)
  • ¼ cup brown sugar
  • 1½ teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt butter over medium heat; sauté chopped onions for about 4 minutes, then add minced garlic and cook for another 30 seconds.
  3. In a large bowl, combine sautéed onions and garlic with ground beef, milk, eggs, breadcrumbs, ketchup (2 tablespoons), Italian seasoning, salt, and pepper. Mix until just combined.
  4. Transfer the mixture into a loaf pan and smooth the top.
  5. Bake in the preheated oven for approximately 40 minutes.
  6. In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar for the glaze. Spoon it over the meatloaf and return to the oven for an additional 20–30 minutes.
