  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 lemon (juiced and zested)
  • 1 red bell pepper (cut into pieces)
  • 1 medium red onion (cut into chunks)
  • 1 large zucchini (sliced)

Instructions

  1. In a bowl, whisk together olive oil, red wine vinegar, lemon juice and zest, garlic, herbs, salt, and pepper.
  2. Place steak in a zipper-locking bag with half the marinade; seal and refrigerate for 2 hours.
  3. Prep vegetables by coating them with olive oil, salt, and pepper.
  4. Thread steak and vegetables onto skewers.
  5. Preheat grill over high heat; grill kabobs for about 8 minutes until beef is cooked through.
  6. Rest kabobs for 5 minutes before serving.
