Ingredients
- 1 1/2 to 2 pounds top sirloin steak (cut into 1/2 inch cubes)
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 lemon (juiced and zested)
- 1 red bell pepper (cut into pieces)
- 1 medium red onion (cut into chunks)
- 1 large zucchini (sliced)
- Fresh parsley (for garnish)
Instructions
- In a bowl, whisk together olive oil, red wine vinegar, lemon juice and zest, garlic, herbs, salt, and pepper.
- Place steak in a zipper-locking bag with half the marinade; seal and refrigerate for 2 hours.
- Prep vegetables by coating them with olive oil, salt, and pepper.
- Thread steak and vegetables onto skewers.
- Preheat grill over high heat; grill kabobs for about 8 minutes until beef is cooked through.
- Rest kabobs for 5 minutes before serving.
