  • 1 (15 oz) can white cannellini beans (drained & rinsed)
  • 2 mini cucumbers (chopped)
  • 12 tbsp red onion (chopped)
  • 1/2 red bell pepper (chopped)
  • 10 oz little tomatoes (halved)
  • 1/3 cup Kalamata olives (pitted & chopped)
  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp red apple vinegar
  • Fresh parsley, oregano, salt & pepper

Instructions

  1. In a large salad bowl, add drained white beans.
  2. Layer in chopped cucumbers, red onion, red bell pepper, halved tomatoes, and Kalamata olives.
  3. Sprinkle with fresh parsley and dried oregano.
  4. Drizzle olive oil and red apple vinegar over the top; season with salt and pepper to taste.
  5. Toss gently until well combined. Chill in the refrigerator for about 30 minutes before serving for enhanced flavors.
