Ingredients
- 1 (15 oz) can white cannellini beans (drained & rinsed)
- 2 mini cucumbers (chopped)
- 1–2 tbsp red onion (chopped)
- 1/2 red bell pepper (chopped)
- 10 oz little tomatoes (halved)
- 1/3 cup Kalamata olives (pitted & chopped)
- 1/2 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tbsp red apple vinegar
- Fresh parsley, oregano, salt & pepper
Instructions
- In a large salad bowl, add drained white beans.
- Layer in chopped cucumbers, red onion, red bell pepper, halved tomatoes, and Kalamata olives.
- Sprinkle with fresh parsley and dried oregano.
- Drizzle olive oil and red apple vinegar over the top; season with salt and pepper to taste.
- Toss gently until well combined. Chill in the refrigerator for about 30 minutes before serving for enhanced flavors.
