Ingredients
- 1 Tbsp avocado oil
- 1 large yellow onion (diced)
- 1 pound ground beef
- 1 small head cauliflower (chopped into florets)
- 1 bell pepper (chopped)
- 5 cloves garlic (minced)
- 2 Tbsp chili powder
- Sea salt to taste
- Optional: 4 cups baby spinach
- Optional garnish: Fresh parsley
Instructions
- Heat the avocado oil in a large non-stick skillet over medium-high heat.
- Sauté the diced onion for about 5 minutes until softened.
- Push onions aside, add the ground beef, and brown for 2–3 minutes before breaking it apart.
- Stir in cauliflower, bell pepper, garlic, chili powder, and salt until well mixed.
- Add broth or tomato sauce and spinach if desired; cover and cook for approximately 5 minutes.
- Stir again and cook until liquid evaporates and cauliflower reaches desired tenderness (about another 5–8 minutes). Adjust seasoning as needed before serving.
