  • 1 teaspoon brown sugar
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • 8 corn tortillas
  • Sour cream
  • Cotija cheese
  • Guacamole
  • Salsa
  • Pickled red onions
  • Chopped cilantro for topping

Instructions

  1. Chop the sirloin into bite-sized cubes and set aside.
  2. In a mixing bowl, combine the spices with salt and pepper.
  3. Toss the steak cubes in vegetable oil and coat with the spice mix.
  4. Let marinate for 5–10 minutes.
  5. Heat oil in a cast iron skillet over medium-high heat.
  6. Sear the steak cubes for about 3–5 minutes until browned on all sides.
