Ingredients
- 4 ears fresh sweet corn
- 1 tablespoon olive oil
- 1/2 cup diced red onion
- 1 jalapeño pepper
- 2 cloves garlic
- 1/4 cup mayonnaise
- 1/2 cup crumbled cotija cheese
- 2 tablespoons fresh lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fresh parsley
Instructions
- Grill the corn brushed with olive oil over medium-high heat until lightly charred on all sides. Let cool before cutting off the kernels into a large bowl.
- In the bowl, mix in diced red onion, jalapeño, minced garlic, mayonnaise, cotija cheese, lime juice, chili powder, smoked paprika, salt, and cilantro.
- Toss everything together until well combined. Taste and adjust seasonings if necessary.
- Serve warm or at room temperature garnished with additional cotija cheese and cilantro.
