- 16 graham crackers
- 1/2 cup pecans (toasted)
- 4 tbsp unsalted butter (melted)
- 1/4 cup sugar
- 1 pound cream cheese (room temperature)
- 1 cup sugar
- 2 large eggs
- 1/3 cup sour cream
- Vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- Crush graham crackers and pecans until fine crumbs; mix with melted butter, sugar, and cinnamon.
- Press the mixture into muffin tin cavities to form the crust.
- Beat cream cheese until smooth; gradually add sugar, salt, vanilla, eggs, and sour cream until combined.
- Pour filling over the crusts in each cavity, filling three-quarters full.
- Bake for about 18 minutes until set at the edges but slightly jiggly in the center.
- Cool completely in the tin; refrigerate for at least two hours before serving.
