  • 4 tbsp unsalted butter (cold)
  • 1 fresh peach (sliced)
  • 3 to 4 oz cream cheese (room temperature)
  • 2 tbsp honey
  • 1 tsp lemon juice
  • Cinnamon and ginger (for flavor)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and diced cold butter until crumbly.
  2. Mix ice water and vinegar; gradually add to the dough until it holds together.
  3. Shape the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  4. Preheat the oven to 425°F (220°C). Roll out the dough into squares and shape into tart shells on a baking sheet.
  5. Layer two slices of cream cheese in each tart shell, drizzle with honey mixture, and top with peach slices.
