- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 1 can sliced pineapples (drained)
- Maraschino cherries
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a saucepan, melt the butter and mix in brown sugar until smooth; pour into muffin cups.
- Place one pineapple slice and a maraschino cherry on top of each.
- In a mixing bowl, cream together sugar and egg until fluffy; add milk and vanilla.
- In another bowl, whisk flour, baking powder, and salt; gradually combine with the wet mixture.
- Spoon batter over the pineapple layers in muffin cups.
- Bake for about 20 minutes or until a toothpick comes out clean; cool slightly before serving.
