- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 1/4 cups finely ground almond flour
- 1/2 cup plain flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 cup chopped fresh apricots (or soaked dried apricots)
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, beat softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla and almond extracts.
- In another bowl, whisk together almond flour, plain flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients until combined without overmixing.
- Fold in chopped apricots gently.
- Pour batter into a greased 9-inch round pan and bake for about 30 minutes or until a toothpick comes out clean.
- Allow to cool on a rack before frosting.
