Ingredients
- 4 Tbsp extra-virgin olive oil
- 1 large head cauliflower (trimmed and sliced into florets)
- 4 Tbsp mild harissa
- 2 Tbsp tahini
- 1 Tbsp honey
- 2 Tbsp fresh lemon juice
- Fresh chopped parsley (for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- In a mixing bowl, combine 2 Tbsp olive oil, 1/2 tsp salt, and 2 Tbsp harissa. Add cauliflower and toss until evenly coated.
- Spread cauliflower on a baking sheet in a single layer. Roast for about 35 minutes, tossing halfway through.
- In another bowl, whisk together the remaining olive oil, tahini, honey, lemon juice, salt, and black pepper until smooth.
- Once the cauliflower is done roasting, drizzle with the tahini-honey sauce and garnish with parsley before serving.
