  • 4 Tbsp extra-virgin olive oil
  • 1 large head cauliflower (trimmed and sliced into florets)
  • 4 Tbsp mild harissa
  • 2 Tbsp tahini
  • 1 Tbsp honey
  • 2 Tbsp fresh lemon juice
  • Fresh chopped parsley (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine 2 Tbsp olive oil, 1/2 tsp salt, and 2 Tbsp harissa. Add cauliflower and toss until evenly coated.
  3. Spread cauliflower on a baking sheet in a single layer. Roast for about 35 minutes, tossing halfway through.
  4. In another bowl, whisk together the remaining olive oil, tahini, honey, lemon juice, salt, and black pepper until smooth.
  5. Once the cauliflower is done roasting, drizzle with the tahini-honey sauce and garnish with parsley before serving.
