- 2 c. quick oats
- 1/2 c. mini chocolate chips
- 2/3 c. unsweetened coconut flakes
- 1/2 c. peanut butter
- 1/2 c. honey
- 1 tsp vanilla
- 1 Tbsp ground flaxseed
- 1 Tbsp chia seeds
- 1/4 tsp salt
Instructions
- In a mixing bowl, combine all ingredients: quick oats, mini chocolate chips, unsweetened coconut flakes, peanut butter, honey, vanilla extract, ground flaxseed, chia seeds, and salt. Mix until well combined.
- Cover the bowl with plastic wrap or a lid and refrigerate for about one hour to firm up the mixture.
- Once chilled, roll small portions of the mixture into bite-sized balls (about 1 inch in diameter).
- Store rolled energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
