Ingredients
- 1 cup butter
- 1/2 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1 cup semisweet or dark chocolate chips
- 1/2 cup peanut butter
Instructions
- Line an 8-inch or 9-inch square baking dish with parchment paper.
- In a large saucepan over medium heat, melt the butter and brown sugar while stirring until combined. Add vanilla extract.
- Stir in rolled oats and cook over low heat for about 3-4 minutes until blended.
- Spread half of the oat mixture into the prepared dish, pressing down evenly.
- In a microwave-safe bowl, melt peanut butter and chocolate chips until smooth.
- Pour the chocolate mixture over the oat base and spread evenly.
- Top with remaining oat mixture, pressing down gently, then drizzle with leftover chocolate if desired.
- Refrigerate for at least 2-3 hours until set before slicing.
