Ingredients
- 1 cup graham crackers, crushed
- 3 tablespoons unsalted butter, melted
- 8 ounces cream cheese
- 1.5 cups fresh raspberries
- ¾ cup powdered sugar
- ½ cup whipping cream
Instructions
- Prepare the crust by mixing crushed graham crackers with melted butter and salt. Press this mixture into a spring-form pan and freeze.
- In a mixing bowl, combine cream cheese, 1 cup of raspberries, and powdered sugar until smooth. Whip the cream separately until stiff peaks form, then gently fold it into the cream cheese mixture along with the remaining raspberries.
- Spread the filling evenly over the crust in the pan. Cover with cling film and refrigerate for at least 3 hours or preferably overnight. Garnish with extra raspberries before serving.
