Instructions
- Make the crust by combining graham cracker crumbs and sugar in a bowl. Mix in melted butter until clumpy. Press into a greased pan and refrigerate.
- For the filling, beat cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing well. Whip heavy cream until stiff peaks form and fold into the cream cheese mixture. Spread over the chilled crust.
- Prepare the topping by simmering strawberries, sugar, and lemon juice in a saucepan until syrupy. Let cool before layering over the cheesecake.
- Refrigerate for at least four hours or overnight to set completely before slicing into bars.
