- 3/4 cup softened butter
- 1 and 1/2 cups packed brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 cup old-fashioned rolled oats
- 2 and 1/2 cups semisweet chocolate chips
Instructions
- Preheat your oven to 325°F and line two baking sheets with parchment paper.
- In a bowl or stand mixer, beat softened butter and brown sugar until fluffy. Add the egg and vanilla; mix well.
- Combine flour, baking soda, and baking powder in a separate bowl. Gradually add to the wet mixture.
- Stir in rolled oats and then incorporate blended oat flour (made by processing another portion of oats).
- Fold in chocolate chips until just combined.
- Scoop dough onto prepared baking sheets, spaced apart.
- Bake for about 9-10 minutes until edges are golden but centers remain soft.
- Reshape cookies after baking if necessary and let cool.
