Ingredients
- 1 tablespoon olive oil
- ½ pound Italian sausage (mild or spicy)
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 small potatoes, sliced thin
- 4 cups chicken broth
- 1 cup water
- ½ teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 cup chopped kale or spinach
- ½ cup heavy cream
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned.
- Add onion and garlic; sauté for 2–3 minutes until soft.
- Stir in sliced potatoes, chicken broth, water, Italian seasoning, and red pepper flakes (if using). Bring to a boil.
- Reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
- Add chopped kale or spinach; cook for another 2–3 minutes until wilted.
- Stir in heavy cream; season with salt and pepper to taste.
- Serve hot, optionally topped with grated Parmesan.
