- 3 cups mixed vegetables (carrots and peas)
Instructions
- Prepare your ingredients by chopping the chicken and vegetables into bite-sized pieces.
- Heat olive oil in a large pot over medium heat. Sauté the onion and bell peppers until soft, about 5 minutes.
- Add the chicken thighs and cook for about 10 minutes until browned on all sides.
- Sprinkle in the curry powder, smoked paprika, and garlic powder; stir to combine everything well.
- Cover the pot and reduce heat to low, simmering for about 25-30 minutes while stirring occasionally.
- Once cooked through, serve hot over rice or alongside flatbread.
