- 12 ounces smoked sausage (chicken or turkey, sliced)
- 1 medium onion (diced)
- 1 medium green bell pepper (diced)
- 1 medium red bell pepper (diced)
- 2 celery stalks (diced)
- 3 cloves garlic (minced)
- 1 1/2 cups long-grain white rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- 3 cups chicken broth
- 14.5 ounces diced tomatoes (optional)
- 1 pound shrimp (peeled and deveined)
- 2 green onions (chopped)
- Fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add sliced sausage, cooking until browned. Stir in diced onion, bell peppers, celery, and garlic; cook until softened.
- Add rice and seasonings to the pot; stir to coat well.
- Pour in chicken broth and diced tomatoes if using; bring to a boil.
- Reduce heat to low, cover tightly, and let simmer for about 20 minutes.
- Gently fold in shrimp; cover again and cook for an additional 5 minutes or until shrimp are pink and cooked through.
- Season with salt and pepper; serve hot garnished with green onions and parsley.
