Ingredients
- 4 fresh peaches
- 1 tablespoon plus 2 teaspoons lemon juice
- 2 tablespoons cold water
- 1 tablespoon plus 2 teaspoons unflavored Vegan gelatin powder
- 4 tablespoons pure maple syrup (or sweetener of choice)
- 1 cup heavy cream
- Vanilla cake (homemade or store-bought)
Instructions
- Bake and cool your vanilla cake.
- In a blender, puree three chopped peaches with lemon juice and maple syrup until smooth. Set aside.
- Bloom the gelatin in water for five minutes, then heat until liquefied. Blend with the peach puree.
- Whip heavy cream until stiff peaks form, dividing it for layering.
- Fold half the whipped cream into the peach mousse mixture gently.
- Assemble layers of mousse, cake pieces, whipped cream, and fresh peaches in serving glasses.
- Chill for at least three hours before serving.
