- Ground chicken or turkey
- Boston lettuce leaves
- Peanuts, chopped
- Rice noodles
- Soy sauce
- Ginger, minced
- Garlic cloves, minced
- Sambal oelek (chili paste)
- Honey
- Lime juice
Instructions
- In a small bowl, whisk together all sauce ingredients. Combine 3/4 of this mixture with ground chicken and peanuts; marinate for 15 minutes.
- Soak rice noodles in water until softened, then drain and cut into small pieces.
- Heat sesame oil in a skillet over medium heat. Add the marinated chicken mixture and sauté for about 10 minutes until fully cooked.
- Stir in soaked noodles and cook for an additional 5 minutes.
- Scoop the mixture into lettuce leaves and top with cilantro, green onions, peanuts, and any reserved sauce.
