Ingredients
- 10 ounces spring salad mix
- 2 ripe pears (Anjou, Bosc, or Bartlett), sliced
- 3/4 English cucumber, chopped
- 1 small red bell pepper, chopped
- 1/2 cup roasted pepitas or sunflower seeds
- 1/2 cup pomegranate seeds or dried cranberries
- 1/2 cup cheese (feta, goat cheese, or gorgonzola)
- For the dressing: Pomegranate Greek yogurt, Asian sweet chili sauce, pomegranate juice, mayonnaise, apple cider vinegar, lemon juice
Instructions
- Prepare the dressing by whisking together yogurt, sweet chili sauce, pomegranate juice, mayonnaise, apple cider vinegar, lemon juice, poppy seeds (optional), and salt in a medium bowl. Chill for at least 30 minutes.
- In a large bowl, combine spring salad mix with sliced pears, cucumber, bell pepper, pepitas or sunflower seeds, pomegranate seeds or cranberries, and cheese.
- Just before serving, drizzle desired amount of dressing over the salad and toss gently to coat.
