  • 3/4 English cucumber, chopped
  • 1 small red bell pepper, chopped
  • 1/2 cup roasted pepitas or sunflower seeds
  • 1/2 cup pomegranate seeds or dried cranberries
  • 1/2 cup cheese (feta, goat cheese, or gorgonzola)
  • For the dressing: Pomegranate Greek yogurt, Asian sweet chili sauce, pomegranate juice, mayonnaise, apple cider vinegar, lemon juice

Instructions

  1. Prepare the dressing by whisking together yogurt, sweet chili sauce, pomegranate juice, mayonnaise, apple cider vinegar, lemon juice, poppy seeds (optional), and salt in a medium bowl. Chill for at least 30 minutes.
  2. In a large bowl, combine spring salad mix with sliced pears, cucumber, bell pepper, pepitas or sunflower seeds, pomegranate seeds or cranberries, and cheese.
  3. Just before serving, drizzle desired amount of dressing over the salad and toss gently to coat.
