Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and brown sugar until fluffy. Add egg and vanilla; mix well.
  3. Gradually incorporate flour, baking powder, and salt until dough forms.
  4. Scoop dough into 1.5-inch balls and place on the prepared baking sheet. Use your thumb to create a well in the center of each cookie.
  5. In a separate bowl, combine the filling ingredients: brown sugar, corn syrup, melted butter, vanilla extract, chopped pecans, and a pinch of salt.
  6. Spoon about 1 teaspoon of filling into each cookie well.
  7. Bake for 10–12 minutes until edges are golden brown. Cool on the pan for 5 minutes before transferring to a wire rack.
