Ingredients
Scale
- 1½ pounds beef tenderloin (trimmed)
- 4 slices fresh pineapple (½-inch thick)
- 3 tablespoons hoisin sauce
- 2 teaspoons grated fresh ginger
- 1 medium garlic clove (minced)
- 1 teaspoon Dijon mustard
- Salt and pepper (to taste)
- 2 tablespoons pineapple juice
- 1 teaspoon soy sauce
- Fresh parsley (for garnish)
Instructions
- Prepare the Marinade: In a mixing bowl, combine hoisin sauce, grated ginger, minced garlic, Dijon mustard, pineapple juice, soy sauce, salt, and pepper.
- Marinate the Beef: Coat the beef tenderloin thoroughly with the marinade. Let it sit at room temperature for at least 15 minutes or refrigerate for up to 2 hours for deeper flavor.
- Broil the Pineapple: Preheat your grill pan or broiler. Place pineapple slices on it and broil until caramelized on both sides (about 3–4 minutes each).
- Cook the Beef: Heat your grill pan over medium-high heat. Sear the marinated beef on all sides until browned—approximately 10–12 minutes total for medium rare (aim for an internal temperature of about 135°F).
- Serve: Allow the beef to rest for 5 minutes before slicing. Serve with broiled pineapple slices and garnish with chopped parsley.
