- 2 cups fresh pineapple, diced
- 1 large English cucumber, diced
- 1/4 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 small jalapeño, thinly sliced (optional)
- 1/4 cup crumbled feta cheese (optional)
- For the dressing: fresh lime juice, honey or maple syrup, olive oil, salt, black pepper
Instructions
- Wash and prepare all ingredients: dice pineapple and cucumber; thinly slice onion and jalapeño; chop cilantro; crumble feta if using.
- In a small bowl, whisk together lime juice, honey (or maple syrup), olive oil, salt, black pepper until well combined.
- In a large mixing bowl, combine diced pineapple, cucumber, onion, cilantro, and jalapeño. Drizzle with the dressing and toss gently to coat.
- If desired, top with feta cheese before serving. Enjoy immediately or chill for 15-30 minutes to enhance flavors.
