- 1 pkg. yellow cake mix
- 1 3.4 oz. box instant pistachio pudding
- 4 eggs
- 1/4 cup vegetable oil
- 2 tbsp. water
- 1 cup sour cream
- 3/4 cup maraschino cherries (halved)
- 2 cups powdered sugar
- 2–2 1/2 tbsp. milk
- 1 tsp. almond extract
Instructions
- Preheat your oven to 350°F and grease two small loaf pans.
- In a large mixing bowl, combine yellow cake mix and pistachio pudding. Add eggs, vegetable oil, water, and sour cream; mix until smooth.
- Drain and pat dry the maraschino cherries, then fold them gently into the batter.
- Divide the batter between the prepared loaf pans and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the loaves to cool on a wire rack before drizzling with almond glaze made from powdered sugar, milk, and almond extract.
