- 4 large ripe plantains
- 1 lb ground beef
- 2 tsp adobo seasoning
- 1 tbsp sazon seasoning
- 1 onion (minced)
- 3 garlic cloves (minced)
- 1 green bell pepper (minced)
- ¼ cup fresh cilantro (chopped)
- ⅓ cup olives or capers
- 1 cup tomato sauce
- 2 cups dairy-free cheese
- 3 large eggs (beaten)
- Coconut oil
Instructions
- Preheat oven to 356°F (180°C).
- Grease a casserole dish and set aside.
- In a bowl, mix ground beef with sazon and adobo seasoning; set aside.
- In a skillet, heat coconut oil over medium heat; sauté onion, garlic, and green bell pepper until soft.
- Add seasoned ground beef to the skillet; cook until browned.
- Stir in tomato sauce and olives/capers; simmer for 5-10 minutes.
- Prepare plantains by slicing them into strips about 1 inch thick.
- Fry plantain strips in coconut oil until golden brown on both sides.
- In the casserole dish, layer fried plantains at the bottom; brush with beaten eggs.
- Add a layer of ground beef mixture and sprinkle dairy-free cheese on top.
- Repeat layering process for additional layers.
- Finish with another layer of plantains topped with egg wash and more cheese.
- Bake for approximately 20 minutes or until golden brown on top.
- Allow cooling slightly before serving.
