  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion (minced)
  • 3 garlic cloves (minced)
  • 1 green bell pepper (minced)
  • ¼ cup fresh cilantro (chopped)
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs (beaten)
  • Coconut oil

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Grease a casserole dish and set aside.
  3. In a bowl, mix ground beef with sazon and adobo seasoning; set aside.
  4. In a skillet, heat coconut oil over medium heat; sauté onion, garlic, and green bell pepper until soft.
  5. Add seasoned ground beef to the skillet; cook until browned.
  6. Stir in tomato sauce and olives/capers; simmer for 5-10 minutes.
  7. Prepare plantains by slicing them into strips about 1 inch thick.
  8. Fry plantain strips in coconut oil until golden brown on both sides.
  9. In the casserole dish, layer fried plantains at the bottom; brush with beaten eggs.
  10. Add a layer of ground beef mixture and sprinkle dairy-free cheese on top.
  11. Repeat layering process for additional layers.
  12. Finish with another layer of plantains topped with egg wash and more cheese.
  13. Bake for approximately 20 minutes or until golden brown on top.
  14. Allow cooling slightly before serving.
