  • 4 garlic cloves, minced
  • 1 1/2 tbsp olive oil
  • 1/2 tbsp taco seasoning
  • 1/2 tbsp oregano
  • 1/2 tsp salt
  • 1/3 tsp pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the potatoes into medium cubes. In a mixing bowl, toss them with olive oil, taco seasoning, oregano, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet and bake for 15 minutes.
  4. While baking, combine green beans in the same bowl with olive oil, minced garlic, and salt; stir well.
  5. After 15 minutes, add the green beans to the baking sheet with potatoes and mix gently. Bake for an additional 20-30 minutes until both vegetables are tender.
