Ingredients
- 1 1/2 lbs potatoes
- 1 lb green beans
- 4 garlic cloves, minced
- 1 1/2 tbsp olive oil
- 1/2 tbsp taco seasoning
- 1/2 tbsp oregano
- 1/2 tsp salt
- 1/3 tsp pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the potatoes into medium cubes. In a mixing bowl, toss them with olive oil, taco seasoning, oregano, salt, and pepper until evenly coated.
- Spread the seasoned potatoes on a baking sheet and bake for 15 minutes.
- While baking, combine green beans in the same bowl with olive oil, minced garlic, and salt; stir well.
- After 15 minutes, add the green beans to the baking sheet with potatoes and mix gently. Bake for an additional 20-30 minutes until both vegetables are tender.
