Ingredients

  • 1 ripe avocado, sliced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tsp olive oil, for roasting
  • Optional: 2 hard-boiled eggs, halved, fresh parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. In a skillet over medium heat, heat olive oil. Add ground beef or turkey and cook until browned. Stir in tomato paste, cumin, smoked paprika, salt, and pepper; simmer for 2-3 minutes.
  3. In a mixing bowl, layer cooked meat, roasted sweet potatoes, sliced avocado, and top with halved hard-boiled eggs if desired. Garnish with parsley or cilantro.
