- 1/2 cup chilled unsalted butter
- 1/2 cup white sugar
- 1 large egg
- 2 cups plain flour
- 1 teaspoon vanilla essence
- 1/3 cup almond meal
- Approximately 1/2 cup apricot preserves
- 2 tablespoons powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the chilled butter and sugar until light and fluffy.
- Mix in the egg and vanilla essence until well combined.
- Gradually incorporate the flour and almond meal until a soft dough forms.
- Shape the dough into balls and place them on the baking sheet about two inches apart.
- Create an indentation in each ball with your thumb and fill it with apricot preserves.
- Bake for approximately 10 minutes or until lightly golden around the edges.
- Allow cooling on a wire rack before dusting with powdered sugar.
