Ingredients
- 5 ounces quartered dried apricots
- 3/4 cup dry or sweet white apple vinegar
- 2/3 cup white sugar
- 2 cups half-and-half cream
- A few drops of lemon juice
- 1/2 cup coarsely chopped pistachio nuts
Instructions
- Soak quartered dried apricots in apple vinegar for 5 minutes to soften.
- In a mixing bowl, combine the drained apricots, sugar, half-and-half cream, and lemon juice. Whisk until smooth.
- Pour the mixture into an ice cream maker and churn according to manufacturer instructions (about 20–30 minutes).
- Gently fold in the chopped pistachios once the ice cream reaches soft-serve consistency.
- Transfer to an airtight container and freeze for at least 4 hours before serving.
