  • 1/4 cup olive oil
  • 3 tablespoons red apple vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the orzo in boiling salted water until al dente; drain and rinse under cold water.
  2. In a bowl, whisk together olive oil, lemon juice, vinegar, mustard, garlic, oregano, salt, and pepper.
