Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together ricotta cheese, sugar, and softened butter until light and fluffy.
- Mix in eggs and vanilla extract until fully incorporated.
- In another bowl, combine flour, baking powder, and salt; stir until mixed.
- Gradually add dry ingredients to wet mixture; stir until just combined.
- Gently fold in raspberries, chopped pistachios, orange zest, and orange juice without crushing the raspberries.
- Pour batter into a greased cake pan evenly.
- Bake for 35-40 minutes or until a toothpick inserted comes out clean.
- Allow the cake to cool completely before serving.
