- 3 medium zucchinis (21 oz)
- 1 cup fresh basil
- 1 clove garlic
- 1/4 cup grated Parmesan cheese
- 1 cup cherry or grape tomatoes (halved)
- 3 tablespoons extra virgin olive oil
- Kosher salt and black pepper to taste
Instructions
- In a food processor, blend the basil, garlic, Parmesan cheese, salt, and pepper until smooth. Gradually add olive oil until fully combined.
- Spiralize the zucchinis into noodle-like strands.
- In a mixing bowl, toss the zucchini noodles with the pesto and halved tomatoes. Season to taste with salt and pepper.
