  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 cup warm whole milk
  • 1/3 cup warm heavy cream
  • 1 egg
  • 1 egg yolk (for egg wash)
  • 1 tablespoon sesame seeds

Instructions

  1. In a stand mixer bowl, combine bread flour, sugar, salt, instant yeast, and optional milk powder. Add warm milk, cream, and egg; knead for about 10 minutes until tacky.
  2. Cover the dough and let it rise for about 2 hours until doubled in size.
  3. Divide the dough into 9 equal pieces and shape each into a ball.
  4. Flatten each ball into a circle and place red bean paste in the center; fold and seal securely.
  5. For flower shapes, cut slits into the surface before letting the buns rise again for another 30 minutes to an hour.
  6. Brush with egg wash, sprinkle sesame seeds on top, and bake at 350°F for about 20 minutes until golden brown.
